I wouldn't worry about the dip coming off. I have been dipping my back glass for a couple years now, and have had no issues with car washes. PlastiDip (if applied correctly) is very resilient, and will only peel off if you want it to.
As Frenchy42 mentioned, you can paint over the dip, but it does reduce the peel-ability of the dip, just make sure you have a decently thick base to spray over.

I have read on here that it's easier to remove the dip if you have a thick base. Apparently a thin base of dip is a real SOB to remove.

What you have to do is just make sure you put it on thick. When I did my stripes, i did about 3 normal coats, with about 5-10 minutes in between, and then a super heavy coat on top of those. If you are masking, make sure to peel it while the dip is still wet, or it will come up with the tape.

An interesting look, I've always thought that GM could have blacked out the B and C pillars from the factory anyway.

I would prefer gloss black. Do they make plasti-dip in gloss?

No, not as such, but they provide a spray can "glossifier" that you use as a top coat over the matte finish to provide a glossy finish - ie: https://video.search.yahoo.com/video...2Cm%3Asa&&tt=b
