You can wire a manual switch to turn the radio on or find an ignition switched wire to tap off of for the red wire on the new head unit which will make it turn on only when the ignition is on (drains a lot of power when you just want some music - not recommended)
I don't miss the annoying chimes one bit. I don't find it tedious to flip a switch when I want the head unit on or off.
Just depends which you prefer. Lots of options for switch placement.

I've worked with electronics for almost 50 years, I have programmed PLCs and robots, build Arduino projects, design circuits and am employed as an industrial electrician.
That said, I would NEVER try to splice into the wiring in any post-2000 car. If it has an OBD II port, it's got some sort of CAN bus. Just spend the money and get the proper adapter and wire it according to the directions. Even with my background, I am not vain enough to think I know better than the engineers who designed newer car electrical systems. It's all interconnected, and chopping away is generally just going to make things worse rather than better.
