I have seen a couple temp spikes in the 210-212 range, and then came back down to 189-199 range which I dont think is a big deal. I am sure GM spared no expense on a "high quality" thermostat. I am switching mine to a Robert Shaw in the spring.
I use to run dyno's testing engines and we took temps into to 240-60 range to make the gaskets puke. 230+ is where I would get concerned.

Something tells me I'll be switching over to my Avalanche if the snow gets deeper than an inch or two.

You can go deeper than that. 1-2 is nothing.

In the Avalanche or SS?

Interestingly I took the Avy to work today and on the way home there was no snow build up on the roads at all. I could have taken the SS to work. Instead my wife had to take our dog to get groomed today, so I can only imagine how much white dog hair is in my passenger seat right now.

As for the dog mine does not get in. I only take him in the GP with the leather seats.

I don't want the hair or the scratches on the rockers.

only problem i can think of winter related is opening the doors with ice built up behind the bottom front corner, the heat/defroster works so much i have to put it bout half way or else i melt my face off (and yes it feels like it gets hot enough to melt someones face off!!!!) if the heat is maxed out and i put it on the dash vents, i cant hold my hand in front of the vent for too long or else it feels like burning. i have noticed tho, that on slick roads the wind has a tendency to shift the back a lil and the ECS or whatever kicks in if i try and do a parking brake slide to turn around real fast instead of doing a K turn

Talking SS in the snow

We have had a lot of snow already and I have to say I am impressed with the SS. Haven't changed a thing; stock tires/wheels - at least for now. It seems easier to take off if traction control is off in the slush & deeper snow.

There's no shortage of available heat. It's just that there isn't enough airflow to the outer portion of the windshield to offset ice buildup during heavy snow.
