Need help new tires ( size consideration)

My stock tires are 215-55r- 16
I want to go with 205-55r- 16
My questions:
1) Understanding the width is only a diff of 25/64 " what real life differences will I see or feel while driving the vehickle?
2) Will I encounter any difficulty from tire sellers/ installers with regards to the purchase and install?​​​​

Different Size Tires and Wheels
If you add wheels or tires that are a different size than your original equipment wheels and tires, this could affect the way your vehicle performs, including its braking, ride and handling characteristics, stability, and resistance to rollover. Additionally, if your vehicle has electronic systems such as anti‐lock brakes, rollover airbags, traction control, and electronic stability control, the performance of these systems can be affected.

Your car is calibrated for the size tire it came with. Changing tire diameter will effect things (which is more important than width) unless you reprogram it for that new size.
Are you saying you don't have the cash to buy the correct tire? What's an extra $10/20 for a tire?

I did a similar switch on the 17" wheels from 215 50 17 to 205 50 17. Car rides nicer and has no adverse effects on shifting/abs, etc. I felt the stock tires were actually too wide for a small car with limited power. These tires are actually better in the snow and rain as well. I have run smaller wheels and tires in the winter on other same year GM cars without any effect other than minor speedometer inaccuracy (multiple sites will show the difference). Just an alternative opinion.
