No mystery, Lee... Just "walking on the edge" of the tolerances. Some will trigger the code (usually MAF related, either P0171 > lean or P0172 > rich), others not.

Has anyone compared the stock intake vs. the aftermarket products for actual intake air temperature with the same conditions?

Makes sense to me. Guess I am one of the unluck ones that was on the edge and only needed a little nudge to push me over.

I just happened on this link done a while ago. I assume the Airraid has about the same performance specs as the GMPP, since they are both a similar design.
