SocalHHR wing recipies

per request. These were served at the last So Cal HHR get together. Maybe Angie will follow up with the guacamole and bean recipies :)

The "HHR" wings is a modification of a recipie I found called Hot Rod Wings, and so....well, I took the liberty of naming the new version after "Her Hot Rod"

HHR Wings
Ingredients:
2T Olive Oil
1/3 C lemon Juice
1T Lime Juice
1T minced jalapeno peppers (or more)
1-2T ground Chipotle pepper
1T chicken stock (bullion, or even salt-water works)
1t Ground minced ginger
2t minced garlic
2t dried thyme
1-3T Franks Red Hot sauce
1/2 t each garlic and onion powder
20 or so Chicken wings (seperated)

Preparation
1. Mix everything but the wings together with a whisk in a bowl, or anything large enough to marinate the wings in.
2. Place wings in bowl, cover, marinate minumum 4 hrs.
3. BBQ over medium heat. (about ½ hr)


Brushfire Wings
Ingredients:
1T veg oil
1/2 Cup diced red bell pepper
1/2 Cup diced red onion
1 heaping T minced Garlic
1/2 C Franks Red Hot sauce
1/2 C ginger ale (or lemon lime soda).
2T honey
1T brown sugar
20 wings seperated and tossed with
1 T oil + pincehs of salt and pepper and cayenne

Preparation
1. Sauté the onion, bell pepper, and garlic till golden. Add hot sauce, soda, honey and brown sugar.
Reduce heat and simmer till thick (10 mins)
2. BBQ for 30 minutes over med heat and baste every 5-10 minutes till sauce is gone.

Beef or Chicken Satay/Satay Wings
Ingredients:
1 lb Chicken breast, Flank Steak or 2 lbs Chicken wings
Marinade:
5T coconut milk
2T Soy Sauce
1T veg oil
2t ground tumeric
1t curry powder
1/2 t coriander
1/2 t cumin

Peanut Sauce
2T peanut oil
3T red curry paste
2t fish sauce
2t lemon juice
1/4 C peanut butter
1/2 C coconut milk
Preparation
1. Mix marinade ingredients together, add meat and marinate overnight.
2. If doing Skewers, soak skewers in water first, then thread meat onto skewers before adding marinate to meat.
3. BBQ till cooked. (if doing wings, use peanut sauce as a baste.

Original Buffalo Wings
Ingredients:
½ c Franks Redhot sauce
1/3 c melted butter
2.5lbs chicken wings

Preparation
Bake wings at 425 for an hour till crispy or deep fry for 12 minutes at 400 degrees
Combine sauce & butter, and dip wings to coat

dip in
Blue Cheese Dip
Ingredients:
¾ C Sour Cream
1 1/3 C Mayo
1t Worcestershire sauce
½ t each dry mustard, salt, pepper, & garlic powder
4 oz crumbled blue cheese

Preparation
Mix everything together in a bowl and refrigerate for 4 hours or more before serving .



Red Pepper Hummus
Ingredients:
1 (16 ounce) can chickpeas
2 tablespoons tahini
1 tablespoon lemon juice
2-3 cloves garlic (pressed or crushed)
1/2 cup roasted red pepper
1 1/2 teaspoons cumin
1 teaspoon coriander
1/4-1/2 teaspoon cayenne
1/2 teaspoon salt
fresh ground pepper

Preparation
1. Drain & rinse chick peas/garbanzos, reserving liquid.
2. combine all ingredients in a food processer bowl and blend till smooth.
3. Once the hummus gets smooth, add some of the reserved liquid from the chick peas/garbanzos if too dry.

NOW this is the ficken's for some good eaten. These are recipies for some good ol red neck, stomach stuffen stuff. If you have an ulcer some of these will either get rid of the ulcer or get rid of you, either way ya all will be happier after you have eaten em. Who ever made the salsa, if you can post that I would appreciate it. That HOT one was over the top, but let the tears flow, your tounge bleed, smoke, go numb or what ever it was good.

Although not a fan of the volcano hot food, I can personally vouch for the HHR wings and the Red Pepper Hummus. Outta Site man! and here I thought Hummus was like a lot of Hummers.

As for the HotStuff, my buddy Todd ( UMA ) could not stay away and I watched him go after it til he was red and sweatin. Angies Guac and the beans were amazing too. We MUST do that again and soon.
