we had to try 4 different gas caps all from GM until it "liked" the one we inserted..but im not sure if it was throwing a code as well..hmm now im confused lol

The gas cap will throw a code but not cause the vehicle to not start. Do you have access to a fuel pressure tester? It may be low. Also check for water or contaminated fuel.

I noticed there is a schraeder valve on the fuel rail. Am I supposed to just hook up an air pressure gauge there or do I need a special gauge meant to handle fuel?

What kind of fuel pressure readings should I be seeing?

We had also thought that maybe wwater or contamined fuel could be the cause. Is there a way to test the fuel for water?

I found this on the web:

"Water in fuel is easy to figure out. Put a sample (say 5 to 10 ounces) of the fuel into a clear glass container. Let it sit. If it separates into two layers, you have water in the fuel."

Yes you need a fuel psi tester. Most auto parts stores sell them and some will rent them out

I would also check to see if its just flooded. The low temp could have made it flood out easy. You can remove a spark plug and see it is wet. If they are I would clean them or change them before investing it a fuel psi tester. There is a clear flood mode on fuel injected cars. If you hold the gas pedal down to the floor while cranking the engine the PCM will turn off the fuel injector to try to clear a flooded condition.

wild guess...cam position sensor? i had a grand prix that wouldn't start due to that...had spark, compression, and fuel

you have fuel to the rail but are the injectors opening? One other item to look into is the oil press swt..safety item..shuts things down if theres no oil press with key on,,keeps the pumps from running after an accident..so, initially you will get fuel press(to start) but after this if oil press is not recognized after so many seconds it stops.
