187-192° is the average running temperature on my three that aren't scattered about in boxes, 205-ish when idling in heavy Charlotte traffic.
As pointed out in earlier posts, the fan should engage at 217° or when the A/C is on.
Anything over 235° to 240° is very dangerous on Ecotec engines, it's almost a guarantee of serious damage.

Been 183-187° city (MI <40° winter), now 208-212° (47-50° Spring)
Was worried about the boost but now glad it's approaching normal :)
Winter (MI) MPG was 18-19.5.
Even in summer, operating temps never seemed to rise above 195. Got 21.5 best city MPG.
With the aerodynamics boost and increased efficiency I'm hoping for better MPG. Will update!
Do you have an SS 2.0 turbo, in other post you state you have a LS 2.2, which wouldn’t be under boost.
If you closed off the air intake under tge fender you cut all intake air to the throttle body and that will increase fuel consumption
