It looks too brown to be ATF. The ATF in the car is brand new, and there's no red color to the oil in the water

That's quite a bit of oil loss. Does seem more likely (to me) that it is engine oil in the coolant.

Oldblue, are there any pressurized oil passages going through the head gasket?

Yes, oil has to be able to get to the camshafts bearings then return down to the oil pump

Thanks for the info. I'm thinking maybe it's a faulty head gasket or the deck on the block isn't level. I never checked if the deck was level before putting on the new head.

Could be wrong head gasket? One doesn’t fit all Ecotec engines or is it possible you reused the old head bolts? They are one time use torque to yield bolts and are not reusable.

I used new head bolts and my head gasket was from this Enginetech kit GM134K7. It's been almost 3 years now since I replaced it

When looking at it compared to the GM Genuine 24444091, it looks the same:
