What do you mean estimate ? You have a numeric digital coolant temp gauge in the DIC display on your car. No estimates needed.
If the analog gauge and digital gauge don’t show a temp, it’s usually caused by the coolant not heating up fast enough from startup. That usually points to a bad thermostat. Will trigger a P0128 code.
Very small chance it’s the temperature sending unit.

Yes, I did have my display showing --- F for over 10-12 minutes of driving. F finally at my destination it started showing a temp. The analog gauge was also not moving and bottomed out.

I mean It was getting hotter than just 212. At that point I shut the engine off. As I mentioned,, it's normally running in the 190's.

My guess is a temp sensor and/or fan.

Thanks for all the suggestions.

Another symptom that I noticed today after it was idling for about 30 minutes the temperature went up to 217, the fan turned on and it still hasn't turned off after 45 minutes and the temperature has been holding at 168.

I haven't seen the dashes in the digital display today. Maybe just replace the temp sensor since it's easier to get at?

While you’re at it change the thermostat, AC Delco 131-158 180 degrees, don’t install a cheaper aftermarket part, you’ll be doing the job twice! Just 2 ,10 mm bolts

168F is too low. The fan should turn back off at about 179F. After warm up the temp should NEVER go below 179F.
