Coolant temp issue

When mine is started from cold, it will climb to about 205-211 as it warms up going down the road. Then the thermostat will open and the temp will drop down to 180 ish. It will then climb to about 187-189 and remain there.

I have seen mine climb up to the 205-207 range when stuck in traffic. Cools back down when I get going again and have some road air flow through the radiator.

Try a new thermostat as suggested. The climbing temps then sudden drop sounds like a sticking thermostat not opening at the correct temp.

Seeing how there's still a 45days warranty from when I bought it in going to take it in and see what they say

Don't be surprised when they stick a cheap aftermarket thermostat in and possibly even incorrect coolant! And the prerequisite air bubbles, which they're gonna blame a headgasket on!

Well the pressure test was fine and the thermostat is fine turns out they never topped off the coolant before I bought it. And they use Dexcool so we should be good now. If I still have problems I'll be taking it back.

Why would it need to be topped off? Where did it go? You mean to say you never bothered to check the level?

It doesn't take a mechanical engineer to unscrew a cap or to look at the overflow tank. I'm pretty sure the Owner Manual explains how to check the coolant level.

I won't lie I was lazy. Plus if that isn't the problem now that I had them open a ticket for the problem if it happens again I can take it in outside my 45 day warranty and they can take care of it.

I'm lazy, too. But, I spent more time here than looking at a bottle under the hood would take.
