Cooling system issues

I have a 2007 HHR with the 2.2l engine and auto. For the longest time the temperature readout on the info area and the gage weren't working. I have a new thermostat to correct that issue but the fan was always working like it should. Now today the gauge and temperature readout are working but the fan isn't. My main question is what temperature is the fan supposed to come on at? Also, is this a sign that the sensor that controls the fan has failed? If I keep moving the temp. readout reached a high of 197 degrees but siting got up to 212 degrees on the readout. I am worried about it getting too high and blowing a head gasket or worse. Start the motor.
Turn on AC
Open hood and verify radiator fan is blowing.
If not, the fan is bad.
When mine wasn't it got replaced.

There can be other things that keep the fan from running.

The fan is supposed to go on at about 217F and turn off when it gets back to about 180F.
It also is supposed to run when the AC compressor is engaged, in AC or Defrost or recirc.
