Potentially stupid question: Why are two AC Delco water pumps listed? 252821 and 251751. I thought there might be an error, as they look different, but Advance has them listed as well. Are there two water pumps, and if so, which one do I need?

The 'professional' grade is lower quality, the oem is better.

The "Professional" is rebuilt. I don't have a problem with that.

If you are removing the balance chain the tool is not needed.

I'm following the Haynes manual, and it says to remove the engine front cover I would need to remove the right engine mount. How necessary is this?

No, simply cut the cross piece of tge front cover gasket, it’s the piece that is holding the gasket behind the engine mount
