What is the manufacturer and part number of the thermostat you installed?
been documented here many times, these Ecotec engines only like the AC Delco 131-158 180 F degree thermostat.

secondly are you sure you are burping any trapped air out of the cooling system? Very important to use only Dexcool 50/50 mixed coolant.

If you keep blowing head gaskets, there is something wrong. Possibly a warped head or block, or damage to the mating surface.
And "keeping coolant in it" says, "coolant is leaving the system, and I'm topping it off periodically". Probably leaving through the poor seal at the head gasket.
