i think you guys covered most of the ones i know of. i love all the metal covers but there are some cool covers from me first and the gimme gimmes and my friends do covers ska style www.myspace.com/drbbqampthewieners

also a group called iron horse does bluegrass covers of metallica songs. apocalyptica is a cello quintet that does covers of slayer, metallica, FNM, sepultura, etc.... and of course there is richard cheese.
