Everyone loves Pork Chops

This is one of my faves and I've yet to serve it to someone who didn't like it.

Boneless thin-sliced pork chops
Graham Cracker Crumbs
Olive Oil
Cream of Mushroom soup

Dredge pork chops in graham cracker. Brown quickly in skillet with olive oil. (do not cook them all the way, just brown the crumbs.) Place in casserole dish and cover with cream of mushroom soup. You can vary the amount of soup depending on how much you want left over to use as gravy. I usually use one big can for 9x13 casserole dish. Bake in 350 oven for about 30-45 minutes. Should have a nice golden top when done. Serve over rice.

Yummy!

Add 1 large can cream of mushroom soup, 1 lb velveeta cheese, 1/2 lb monterey jack with jalapeno cheese, and 2 small cans of chicken broth. Heat on low until cheese is melted. Stir thoroughly and enjoy. Sometimes to make it into a meal I add cubed up chicken breast.

I use the Betty Crocker recipe for pumpkin pie except that I buy a whole pumpkin, clean it, slice it in long pieces, then bake it, skin up on a cookie sheet in the oven. When it's done, I used a food processor attachment to my blender to chop it smooth. I then use the blender to mix all the ingredients and place it in a pre-cooked pie shell. I don't know why but people rave about this pie. I don't add any special ingrediants. Also, a 6-inch pumpkin can make 5 pies and it costs about as much as the canned pumpkin. I also bake the pumpkin seeds for my boys.
