Is it me or does Comp and ESC off mode change the boost regulation

I wouldn't expect the dyno numbers to be any different since you are going to wide open throttle during the run and in any of the modes you have max boost at WOT.
Where I see the difference is at part throttle. Now if the number were different...........

I don't know if thats entirely true, if there is any differance it would show on the graph for sure, as a different curve.

Mental....like that muffler thats a few tones louder but actually does nothing...
"I" doesn't hold back per say...while it normally powers up in a controlled manner, I goes balls to the wall.......when you punch it, its gone...otherwise it just spools up.

A dyno graph wont be able to tell you much if its just a slight difference in the curve. If you dyno your car 5 times you most likely wont get the same curve anyway due to heat, airflow, etc. It'd be hard cause of all the different variables. I personally tried it on the street and didnt notice a difference. May be the placebo effect. Try with traction on, traction off, and comp mode. Traction control could be why you feel the difference. Its not killing the motor.
