A mm or 2 or 1/16 to 3/8 is fine so long as it’s not touching the header
the large coolant pipe/line that runs on the back of the engine, needs to be adjusted for your header doesn't press on it when you bolt it to the engine..
So the 3-4 bolts on each side/end of the large coolant pipe need to be loosen.. once loosen, slighty put the header back into position, and feel along where it it touching the coolant pipe.. rotate the coolant pipe so the header clears the coolant line..
If you can’t move it enough , then consider the tab surgery , and this way you can see which side of that tab to trim.

I dunno. I just wouldn't want to have to remove the header... Again... When you realize that you could have rotated the tube another 1/4" if you had modified the slot while you were in there.
Yes, I would be trying to enlarge the top portion of the slot, not the tab.
You said, "But one of the runners is literally so close to that coolant tube that i dont think i could put a piece of construction paper between it." That's really close. I loosened all the bolts, that tube moved maybe 1mm.
If you remove the 3 bolts on the driver side, and a few hose clamps and hoses, you can do this mod on the workbench. But those hoses were practically welded on mine, and the clamps are difficult also. I would be trying it in place.

I didn't take any pictures, but i wrapped the coolant tube with the header wrap. Its been a few days and everything seems fine to me. A little smoke at first but im guessing that was new gaskets. I also have a new issue.. Along with the zzp header I bought their 2.2/2.4 tune and the ttr solid mount. I noticed while stopped, waiting at Wal-Mart, the car got to about 218 and the fans came on. Which is normal i think but one of the things with the tune was lowered fan temps. So i decided to rev the car to the limiter and it revved to 6800.. Supposed to be raised to 7200. And the small bog at launch they claim to eliminate was still there. I was definitely looking forward to that tune. I don't know if they just didn't flash it on or what? So i emailed them late Friday night and haven't heard anything yet.
