I checked the MAP sensors, now I will follow the wires as far as I can and check those as well.

Still leaning towards clutch slipping, watched the video again and RPM drops only about 500-800 after a shift.

I checked fuel pressure at idle, and it jumps between 240 and almost 400
I put it on engine power and don't get more than 50 to 70 pounds of torque in first gear.

SS's have 2 fuel pumps. The in tank electrical supply pump. Pressure of a good pump is around 50-60 psi.
The high pressure fuel pump (HPFP) is a cam driven mechanical pump. It is on the end of the engine by cylinder #4.
Cold startup you will see as high as 2200 psi from the HPFP. At a warm idle, I see around 300-480 range.

Torque and fuel pressure will go up with load as will boost.

The load should be high taking off in first gear, right? I don't see 1K PSI taking off from a stop. I mean without flooring it
I can get over 1K while moving though. In 3rd gear, 30 miles an hour, stepping on the accelerator and having the RPMs shoot up and the car not accelerate like it's been doing, fuel pressure jumped above 1k and went back down when the rpms went back down.

You didn't read my post correctly.
"Cold startup" is when I see 2200. If your car engine is warm or doing a restart you're not going to see that max pressure.
Here's a picture that shows me doing a mild acceleration from 45 mph in 3rd gear. Note the fuel pressure.
