Weird Issue
Driving my 08 2.4l home tonight temp gauge and ac quit working.
After searching and reading and looks as if the tstat is bad and I need to replace with ACDelco 131-158.
Going to do so in the morning, what I keep questioning in my mind is, shouldn't it have thrown a code or CEL? isn't the CEL what disables the ac? Got me wondering if there is something else going on?

A bad thermostat, depending upon what’s wrong with it, usually causes a variety abnormal coolant temps, not a null gauge reading.
I did scan for codes, there were none. Temp light did not come on. No temp reading in dic just a couple dashes. Have only owned car two weeks so have no idea if stat was ever changed. Coolant levels were fine.

It’s well known that when the thermostat fails and the coolant doesn’t heat up in the required time frame, you may lose the temp reading and AC function.
The OP stated that is what happened to him.
I think this must occur more than one time to trigger a CEL. (P0128) The no temp reading will display dashes (- - -) in the DIC.

No loss in making sure it has the correct thermostat, so I would do it anyway.
But the DIC should show the temp immediately upon startup. I think there's a problem with the temp sensor.
As the age of the coolant is unknown, and likely very old, just dump the cooland, taking the opportunity to swap in a new thermostat and temp sensor, and fill with new Dexcool.
Cheap and easy. If still no reading, likely wiring.
